Christmas Pudding

PUDDING ICE CREAM BOMB


This recipe is an ideal summer dessert and combines the full flavour of Newcastle's Pudding Lady puddings with everyone's favourite - ice cream! A great alternative for a hot summer afternoon or for using leftover Pudding.

Ingredients: 2 litres vanilla ice cream
250 grams of Christmas pudding
125 ml Brandy Custard

Method: Line a bowl or tin with cling wrap.
Soften ice cream until it can be mixed through easily.
Break Christmas pudding up until it has consistency of crumbs and fold all ingredients until thoroughly mixed together.
Pour into bowl and cover with a layer of cling wrap. Place into freezer overnight.
Serve plain or with chilled Custard.
